Steve's Breakfast Salad
We’ve been on a vegan cleanse diet all week. Today is Day 4 and only raw foods are allowed. That means salads all day. Well, I have a feeling that I will have to be creative.
My husband surprised me this morning by making breakfast. For himself. He saw me eyeing his creation, and probably felt guilty. So he asked me if I wanted any, not expecting me to say yes (because “who eats salad for breakfast?”).
Politely, I told him “I’ll wait for a bit.”I probably will make a yummy smoothie after he leaves for work, I thought. But what he was doing was so enticing, I asked if he could make me a plate. It looked so clean, simple, delicious, and healthy. He must be praised for it. And I gave it a name. So, here it is, and I thought I should share it with you. “Steve’s Morning Salad”!
Frisee, chopped
Watercress, chopped
Sprouted greens (we used a mix of cilantro, arugula and spicy blend, chopped or not)
Sunflower seeds (or any kind), roasted, salted
Avocado
Lemon
Olive Oil
S&P
I liked the “chopped” effect and noticed it immediately as I dug into the salad. It made it easier to go on the fork.
You can change/enhance the salad by adding a variety of other yummy ingredients. Cranberries, raisins or dates will add some sweetness. Or sliced apples or pears. For something more citrusy, add orange or grapefruit wedges. Berries will do the job too. Any kind of nuts work and I am partial to anything roasted. It adds another dimension to the taste and texture.
